Quick and Easy Traditional Easter Biscuit Recipe

Hooray! Easter is almost here! Today I am sharing my Mum’s amazing traditional Easter biscuit recipe. In fact, I think it is also my Grandma’s and probably her Grandma’s before her, so it has certainly stood the test of time. Whenever I go back to my parents’ for Easter there is always a plate of these on the go (though Mum usually has to bake a new batch every morning because with all of us in the house they don’t last long!) and even the smell of them – lightly spiced with nutmeg and cinnamon and studded with juicy currants – makes me think of Easter and spring.

I am already down in Somerset at Mum and Dad’s, getting ready for a day of painting fences and putting a new roof on the pool hut and generally helping to spruce up the garden before this summer’s big events (mine and my sister’s weddings), but first I’m going to share this really quick and easy recipe with you. So easy in fact, that it is perfect for making with small children, especially if, like I’ve done, you make the biscuits super cute and rabbit shaped. They work equally well with a round cutter of course, or indeed, any shape you like. Though probably not a reindeer, which is what first arrived when I ordered my rabbit cutter from eBay! Luckily they swapped it pretty fast for me. And from start to finish they take around 30 minutes, mainly from storecupboard ingredients you probably already have.

My Easter table was looking a little bare apart from the biscuits, so I was delighted when HomeSense offered to let me loose in their shop to grab some beautiful props and bunnies for my photos. Choosing from their gorgeous range of pastel hued crockery and huge easter platters was very hard. Their selection of bunnies is second to none too!

(And if you’ve not come across HomeSense before, read this post – but basically, it’s a treasure trove of designer and branded items at ridiculously low prices. Probably my fave interiors shop).

So, without further ado – the recipe!

Quick and Easy Traditional Easter Biscuit Recipe - lightly spiced with cinnamon and nutmeg and studded with juicy currants, these are the perfect biscuits for Easter and rustled up in less than half an hour from store cupboard ingredients.

Quick and Easy Traditional Easter Biscuit Recipe
Prep time:  5 mins
Cook time:  10 mins
Total time:  15 mins
Serves: 25
 
Delicious, simple to make traditional English Easter biscuits, lightly spiced with cinnamon and nutmeg and studded with juicy currants.
Ingredients
  • 10 oz/285 g plain flour
  • 8 oz/225g unsalted butter (at room temp)
  • 4 oz/115g caster sugar
  • 2 oz/55g currants (not sultanas/raisins, they expand too much during baking and ruin your biscuit shapes)
  • 1 tsp nutmeg
  • 1 tsp cinnamon
Instructions
  1. Add all the ingredients bar the currants to a bowl.
  2. Using your fingers rub the butter into the dry ingredients until the mixture starts to bind.
  3. Mix in the currants.
  4. On a surface dusted with caster sugar, roll out the dough to approx half a centimetre thickness.
  5. Using your cutter, cut out as many biscuits as you can, re-roll the scraps and cut a couple more.
  6. Place them on a lightly greased baking sheet, then into the over for 8-10 minutes at 190ºC/375ºF until just golden brown.
  7. Remove from the oven, sprinkle with caster sugar and leave to cool.
