Quick, Easy and Super Delicious Winter Warming Soup Recipe

Ingredients
  • Diced chorizo
  • Can of chopped tomatoes
  • Can of haricot beans (or chickpeas, or any other legume), drained
  • Green leafy veg, sliced thinly (I used fresh savoy cabbage and frozen spinach)
  • Marigold Vegetable Bouillon Powder
  • Smoked paprika
  • Garlic puree
  • Freshly ground black pepper
  • Chilli (if desired)
  • Sugar
Instructions
  1. Heat a saucepan and quickly saute the chorizo until the oils start to release.
  2. Add any fresh veg and stir for a second.
  3. Add the chopped tomatoes, and top up with water to make a couple of bowls of soup.
  4. Throw in any frozen veg, the drained beans, a couple of teaspoons of smoked paprika and veg bouillon, a good squirt of garlic puree, a little chilli (to taste), half a teaspoon of sugar (you can leave this out but it helps with the flavour of the tomato), and a little grind of salt. Stir, and leave to simmer for 5 minutes, or until your veg is soft.
  5. Serve and enjoy!
